Hello Risotto

So this happened a few weeks before today and I am sorry it is posted out of order, but I want you to see it!  The 8th Annual International Risotto Festival was on 17 October and was benefiting the Conrad N. Hilton College of Hotel & Restaurant Management.  There were 18 chefs in the competition and included many from top restaurants in Houston!  Some very important people were judges too like Shelby Hodge, Laurann Claridge, Teresa Byrne-Dodge and even the consulate of Italy!  Because we were cooking risotto, I am sure he was very qualified to judge.  In the end, my beef ragout risotto won 3rd place!  Not bad in a group of 18 but anyone who is my friend knows I want to win always.  I cannot wait for the competition next year!

French lesson of the day:  Risotto est onctueuse et délicieux!

Translation:  Risotto is creamy and delicious!

  2. Hi Chef,

My name is Dominique McGhee and I recently started food blogging in Houston. I attend the Hilton College of Hotel and Restaurant Management and was very excited when I heard about your new restaurant.
After reading your recent blog posts, I was impressed with your love for Houston. I have been living here for about 4 years now and I, too, feel that this city is now home and has much to offer the Culinary world. I plan to come out and visit your restaurant very soon!
You can email me at houstonsfoodmonster@gmail.com I look forward to hearing from you.

  3. Bon Jour Chef Philippe:
You have a very nice blog! How do you find the time for it all. Running a successful restaurant, a website and a blog. My claim to fame is running a house, a blog and a website while attending school. My blog is http://www.cookingwithcatherinenochella.blogspot.com. I have a risotto recipe too on my blog you may like. Last night we had salad nicoise and I was hankering for a dressing I had in a French Restaurant in Fort Lauderdale called Cafe de Paris. I used to love this dressing especially with the terrific rolls they served. Well, through trial and error I believe I made the best dressing. I started with a pear.
I have never attended culinary school, however I come from a family who loved to cooked and would regularly have strong debates on what was the best way to prepare a meal. This was especially true of my Dad.
My cooking blog contains many family recipes and I have reserved a few that I may one day create a cook book. I know you are a busy man, but I do hope you take the time to take a look. It is not as pretty as yours and perhaps amatuerish I know.
