I cannot believe I am doing this. What am I thinking? There is so much for me to worry about as I am opening my new restaurant, PHILIPPE Restaurant + Lounge, in the fall. I have to hire the staff, watch over the building and design of the restaurant, create a menu and much more!
I do not have the time to write a blog. But, I am going to do it, and I am very excited!
My name is Philippe Schmit. I am a chef, I am from France, and I am very happy to call Texas my home. I came to the United States in the 1990s, but when I moved to Houston in 2004, I felt like I was at home. From the beginning, there was something very special about this place that makes me happy. I love the people here, and I love the food here! I love how this big city of many millions comes together every day for work and play. There are so many interesting people and places that I have experienced so far, and so many more I look forward to. I hope you will enjoy this journey with me!
If you wonder about the name The French Cowboy, please allow me to explain. When I had been in Houston for a little while, and I began to enjoy the local culture and to tell my friends who were not in Texas all about it, I would buy Texas things like boots and hats and send them to people all over the world for gifts. Then, maybe five years ago, the Houston Chronicle asked me to go to the rodeo as a reporter to tell them about my experience. They wanted to know what a French chef like me would think about this Houston festival with the big barbecue cook-off.
I went, and I wanted to wear clothes like everyone else, and so I wore boots and a hat! But, I wore my regular, European-style clothes with them and people thought it was funny. After that, people started to call me the French Cowboy, and, as Americans would say, “the name stuck!”
I do consider myself a French Cowboy, because, obviously I am French, but, I also love being a Texan and cooking an infusion style of French food with Texas ingredients. I also want to immerse myself in the culture of Texas as much as I can and want to be an ambassador for the city I know call home.
As a boy in Roanne, France, my favorite comic was about a cowboy named Lucky Luke who lived in the Old West. At that time, I could not imagine I would someday live where I live and do what I do. This blog is about my day-to-day life…my love of Houston as I learn the city more and more, and the work I am doing to open my new restaurant. I am happy to share my life with you so you can see the world through my eyes as The French Cowboy!
